Local shops are getting on board with the Democratic National Convention, and it's paying off. A few locally-owned businesses are getting political. NewsChannel 36 found political cookies at Kai's Kookies and More on South Boulevard near Scaleybark Road.
Kai's Kookies & More LLC has opened its first 1,200 sq.ft. bake and coffee shop at the Crosland Center at 3905 South Blvd. The shop will create 3 new jobs and seat up to 14 people. It's a family-owned bakery that specializes in handmade custom-designed cookies and cheesecakes.
Kai's Kookies & More is the brainchild of Tracy and Patrick Watkins. The business has been around since 2002, subleasing space from a bakery in Huntersville. Tracy started the business in 2002, after her daughter Kai was born with a diagnosis of cerebral palsy. She left her job as an electrical engineer to spend more time with the baby.
While I was out getting some errands done I saw this little bakery and seeing as how my sweet tooth was acting up I decided to give it a try. I went in and saw a beautiful array of cookies, cheesecakes, candies, cupcakes, and breads. I had to control myself for fear I would run out of cash.
The Watkins family is very special to Easter Seals UCP. Daughter Kai is 16 years old and has cerebral palsy. She has received support from us in Charlotte since she was a toddler. Her parents Tracy and Patrick own a bakery aptly named for their inspirational daughter - Kai's Kookies and More. Each quarter, the bakery will be selling a specially decorated sugar cookie for Easter Seals UCP and donating $3 from every cookie sale. The first Easter Seals UCP cookie sale will take place from February 8 - February 15.
